Recipes That Can Be Cooked in a Dorm Room

College students already live on a tight budget so finding ways to save money is always a priority. One way to save money is to cook your own food rather than eat out. For those who live in dorm rooms this can be especially challenging.

If you are lucky you have a fridge and a microwave. You can pick up some basic cooking utensils at the local dollar store or maybe borrow some from home. The real challenge is finding recipes that can be cooked in a dorm room.

I ran across a web site that has a few recipes. Please share other sites or your own recipes for cooking in a dorm room.

This is especially for my sweet and lovely niece Laura, who is a junior in college, and living in a dorm with yucky food. The cafeteria isn’t always convenient (or edible) so I want to make her a cookbook of fast recipes, using minimal ingredients, and using only dorm-approved appliances (micro and fridge).

UNC Charlotte Hosting College Version of “Iron Chef”

As part of the NACUFS Southern Region 2009 Conference being held on the UNC Charlotte campus March 11 – 14, chefs from Southern university and college food services will compete in a culinary challenge Friday at UNC Charlotte in what the school is describing as a collegiate version of “Iron Chef.”

Beginning Wednesday, UNC Charlotte is hosting the yearly conference of the National Association of College and University Food Services Southern Region. More than 120 food service professionals from 30 colleges and universities will attend the conference.

Six chefs from southern universities will compete for medals and the right to represent the Southern Region of the National Association of College and University Food Services at the national competition. Contestants will prepare four portions of an original hot entrée featuring Whole, Dressed Local (sustainable) Organic Rainbow Trout.

The challenge runs from 1:30 to 3:30 p.m. in Halton Arena on the UNCC campus. It is free and open to the public.

Microwave Chicken and Rice Recipe

Yummy Microwave Chicken and Rice

This chicken and rice single dish meal is quick and easy. You can use a microwave glass casserole dish or microwave popcorn popper.

Prep: 5 minutes
Cooking: 10 minutes
Ready to Eat: 20 minutes

Ingredients

1 small boneless skinless chicken breast cut into small pieces
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1/2 cup uncooked rice (Not instant)
1 cup water or chicken broth
1 tablespoon butter
1 tablespoon lemon juice
1 teaspoon dried basil

Cooking Instructions

Put butter into a Microwave Popcorn Popper or a glass casserole dish, and microwave on high for one minute.
Add the uncooked rice, and stir until all the grains are coated in the butter.
Add everything else, and microwave on high for 10 minutes.
Let sit for an additional 5 minutes or until all the liquid is absorbed.
Add salt and pepper to taste.

Chicken broth will make this dish taste a lot better than using water. You can buy a resealable container of chicken broth and use it for several meals. Add more veggies such as peas and carrots or mixed veggies.
